Restaurant Demain welcomed its first guests on January 19, 2024. Dani Hoefnagels: “After gaining 10 years of experience in remarkable places and learning from inspiring chefs, both in the Netherlands and abroad, we felt it was time for a new step. I met Romée in Brabant, the place where we were both born and raised, and together we were ready.
For us, it is essential that Demain radiates identity—that feeling, that part of ourselves. In the kitchen, the core values are Simplicity, Product, and Abstraction. We see it as our mission to let flavors shine through with as little intervention as possible, so that you can taste the purity of each element. Creating a dish is a meeting with nature, a journey of wonder, and a tribute to the inner force that makes each tiny seed grow into something vibrant and flavorful.
I have an amazing team alongside me who share this vision. We extend this personality into every detail: the fragrance, the ambiance, the music—everything must come together and feel as one.
